It’s Memorial Day Weekend. You know what that means. In addition to attending a ceremony or parade to honor those who died in service to our country, it means the first big backyard party(ies) of the season. For many, Memorial Day marks the unofficial start of summer.
If you haven’t yet hit the grocery store to stock up for the weekend, check out some of these mouth-watering recipes. Did someone say ribs? Yes, please! This recipe for jerk baby back ribs with pineapple salsa is a crowd-pleaser. They’re a little more labor-intensive, as they need to marinate for at least 24 hours, and you’ll need to baste them frequently as they cook slowly. There are several elements of this recipe you can make ahead of time. Trust us, the effort is worth it!
This grilled spicy jerk vegetables recipe can be a main dish for vegetarians but will also pair well with the jerk baby back ribs as a side dish. Mushrooms, fennel, bell peppers, asparagus, eggplant, scallions, and onions team up for a hearty and healthy dish.
This grilled summer squash with red onion and feta recipe is great as a side dish, but can also be a main dish for your vegetarian guests. And if you pick up some vegan feta, it’s a tasty treat for the vegans in your life as well.
